Executive chefs, Ron from Abacus, Zoltan from Deckers and Scottfrom KARoo, are working hard to use locally grown produce.Thanks to the hard work of Cayman’s farmers and a drive to buylocal, the availability of local produce is now increasing, enablingmore and more fresh, local ingredients to be incorporated into therestaurants’ cuisine.
Going down memory lane “BIG JOHN”
Every industry has a matriarch, a president, a top dog, the game changer a person whosecontributi on to their chosen profession is unquesti onably irreversible. These Masters of theirdomain come in all shapes and sizes with varying methods of guidance and advice and so it iswith hospitality industry. Our Matriarch came in the form of a giant man with a head the sizeof a TV and hands you could ladle soup into. He bore a uncanny resemblance to the fabled“SHREK” character and was known anywhere but to his face as such. It is with great sadness,much respect and a wry smile that we tribute to our Chairman and dear friend, Mr. JohnArendt, words by Guy Jackson. In this picture you see us at the “Sinful Hush Hush Society”dinner, an experience many of us treasure and sti ll talk about it. One never knows….we mayresurrect the most intriguing and strange dining club again in 2012.
